We are so fortunate in this state to have access to some of the most delicious seafood in the world. We get to enjoy scallops, crab, clams, oysters, Striped Bass, Flounder, Bluefish, and much, much more. We are good at grilling seafood, too. While other campers may be hesitant to cook fish or seafood on the grill, we tend to dive right in and serve it up right.

Bacon Wrapped Scallops with Lemon Aoili – These can be eaten as an evening snack around the campfire or have them along with a fresh salad for lunch. You’ll need a couple of pounds of scallops, some bacon, red wine vinegar, olive oil, and pepper. For the Aioli you need mayo, lemon juice, parsley, lemon zest, garlic, Dijon mustard, and salt. You’ll make the Aioli and pop it in the fridge until the scallops are ready. The scallops will be marinated in the vinegar and oil. You can then wrap them in bacon and put them on skewers. Go ahead and grill them for three or four minutes on each side. You will love these!
Grilled Oysters – Yes, you can! Get about a dozen oysters, some melted butter, lemon wedges, hot sauce, Worcestershire sauce, salt & pepper. You can lay a sheet of aluminum foil on the grill and poke some holes in it so that good grilled flavor can come through. After you clean the oysters you can set them on the foil and close the lid. Grill them for about six minutes. When you take them off the grill you will need to cut the muscles from the shell. Serve them with hot sauce and enjoy!
